The origin of the cocktails that we've created for The Centurion Lounge begins with the essence of what an Overstory cocktail is: classically driven but intriguing, using ingredients from around the world and inspired by different places.


Helen Johannesen, Wine Enthusiast’s 2016 Sommelier of the Year, is widely admired for her approach to wine—making it accessible, fun, and engaging. She’s known for helping redefine the Los Angeles dining scene with Jon Shook and Vinny Dotolo after joining forces with them in 2009. Today, Helen is a partner in their growing footprint of acclaimed restaurants: Jon & Vinny’s Italian and Helen’s Wines. With her special touch, she carefully curates a selection of natural and small-production wines alongside a classic cocktail list.
